8 mouth-watering seasonal wedding cake flavors you’ll love
Creating a memorable wedding cake experience starts from the inside. What tastes, aromas and textures would you like to share with your guests? Is there a flavor that takes you back to a special moment in your childhood, a dessert you had on your first date or ingredients inspired by your heritage or favourite place to visit?
Cake can do much more than just taste delicious, explains Fen Bolodeoku from Mon Annie Cakes and Patisserie, a Fine Art Curation member: "They can tell a story. A story that creates a beautiful new memory." Fen is often inspired by the seasons and the change in feelings and flavors that each one can bring. Today she shares some mouth-watering unique flavor combinations that are sure to wow you and your guests.
Autumn brings changes in form. An apple tree once filled with pretty blossoms is now an orchard of apples. Once lush green leaves now have a burgundy hue. Flavours with a balance of decadence and freshness work well. How about an apple crumble tart with caramelised apples, mascarpone whipped cream and a touch salted caramel, or a chocolate cake with miso caramel, pears and vanilla buttercream.
As the nights draw in we think of cosy nights by the fire and the joy of the festive season and feasting with those near and dear. Chocolate, caramelised nuts and roasted chestnuts are deliciously cosy, complimented with tangy flavours like passion fruit, yuzu and orange. Above we have a profiterole filled with hazelnut praline cremeux and topped with dark chocolate whipped ganache and a vanilla macaron, and a yuzu cake with zesty yuzu jam, vanilla buttercream and a sprinkle of yuzu roasted sesame seeds.
Spring brings new growth, a beautiful freshness and an abundance of blossom. Flavourwise, I am inspired by jasmine and beautiful sweet violet. Above is a tangy lemon cake with a sweet violet Italian meringue buttercream, and a jasmine infused cake with blackberry jam and vanilla buttercream.
The warmer months brings sunshine, outdoor gatherings with a tall glass of icy fresh lemonade, plus a bounty of juicy strawberries, blueberries and stone fruit. Here I created a vanilla cake with strawberry basil jam and vanilla Italian meringue buttercream with a splash of balsamic. Just as nice would be a vanilla cake with blueberry jam, hazelnut crumble and vanilla buttercream.
