"Overall the glorious weather, flavours and colours of spring/summer make for an inspired experience for your guests. Your cake can truly capture the essence of the season in both design and flavour."
4 TIER CAKE
This detail was inspired by embroidery and applique details on wedding dresses. The handcrafted sugar flowers were inspired by garden style floral arrangements. I would like the eye to imagine the flowers gently moving the fresh summer breeze.
A 4 tier square cake inspired by the freshness of spring - Dogwood flowers are native to North America and flower in the spring/summer. The four petal flowers are small and delicate with a beautiful green centre. My interpretation with this design was to capture all the subtlety in the sugar flowers set against a clean white background with gold accents.
This single tier ivory cake design with bow detail was inspired by a bridal headpiece. I wanted to capture its stylish sophistication in a small cake, perfect for an intimate wedding.
"I like to design a cake from the inside out, with delicious flavour as its core foundation. The lightness and freshness of spring and summer can be interpreted in your cake flavours. Using fresh seasonal ingredients make for a truly delicious sensory experience; elderflower, for instance is synonymous with spring. It has a subtle but distinct flavour which pairs well with lemon- another ingredient that that makes for a beautiful light cake. Pairings like lemon and raspberry, lemon and poppy seed, and lemon and pistachio work very well for a spring-summer wedding. Timeless classics like vanilla and strawberry, strawberry and champagne, pistachio and rose and pink grapefruit are also popular choices.
When designing a wedding cake with sugar flowers, it is a beautiful touch to have the flowers made in keeping with your actual wedding fresh flowers. This makes for a thoughtfully curated experience and can inspire conversation amongst your guests.
Some summer days can be particularly hot and it is important to consider how and where your cake is to be displayed. For an outdoor wedding, even a cake with fondant icing might not hold up if displayed for hours in the scorching heat. Consider perhaps having your cake brought out a little later, or having it set up in a beautiful room indoors. You could then invite your guests inside for a big reveal and the cutting of your cake."
